Jinsui is revolutionizing traditional pottery in Japan. The 4th-generation owner and all female employees have an average age of 40. Their modern design and methods breathe new life into a rigid industry, while still preserving traditional skills and quality.
IROIRO, one of their newest product lines, features sharp, modern, and sleek lines. They are made from various types of local clay, and each produces a unique color and characteristics.
The BLACK color is lightly fired and porous. These microscopic holes are said to absorb any bitterness or foreign flavors in the tea, giving it a cleaner taste.
The GRAY color is hardened and less porous, meaning the resulting tea flavor will be closer to the original taste and profile.
The BEIGE color falls in between and offers a balanced flavor. All types of clay (and colors) contain natural iron that alters water at a molecular level and would make its taste sweeter or milder. This can contribute to a better taste of tea in general and is the reason why Japanese tea is often prepared by boiling water in an iron "Testsubin" kettle.
